This weather just makes me want to smile and be productive! It's 8:10am and I just got Willy off to work after getting back from my workout session. At this point, I am usually cranky, tired, and sore. But, today I'm ready to go! Does this weather just make you feel like a new person? Well, it sure does me. I have a lot to do for work today and I am not dreading it at all. I am about to hop in the shower and get my day started with a hot cup of coffee and a banana. Willy gets off work today at 5:00 (which is unusual) so I am very happy. I think I am going to make some poppy seed chicken for dinner. Not healthy, I know, but I bought everything in reduced fat or fat free. That should help a little :)
I got this adorable cookbook at my shower this weekend, so I am whipping it out right now to get the recipe.
My friend from college used to make this all the time and we all loved it!
Poppy Seed Chicken
4 chicken breasts
1 can cream of chicken
8oz sour cream (reduced fat)
1 stick margarine
1 sleeve of ritz crackers
1 tblsp. poppy seed
Cut up chicken into bite size chunks. Combine everything and sprinkle crackers on top. Bake at 350 for 30 minutes....and, VOILA!

ReplyDeleteI love Poppy Seed Chicken. I have made twice in the last month. I always serve mine over brown rice to add to my rationalization to why I am eating it.

ReplyDeleteOh my gosh. I went back to your first post to "meet" you and guess what? You are getting married on my anniversary weekend! Our 6 year is on May 17th! We had a similar short engagement...we were engaged in December of 2002, married in May of 2003! It makes for a crazy couple months of "hurry-&-make-up-your-mind" planning but then the last 3 months are showers & parties & fun! Enjoy every minute of it- it flies by & when its all done you'll be wanting to do it again (with the same guy, of course!)
