Finally, it's the weekend! This week has gone by slow for some reason. I guess because I've been so busy at work. Well, no more after 5!
When Jim gets off work we are heading to his hometown for that golf tournament I mentioned earlier this week. Tonight we will be going straight to our friends house for a low country boil. I think I am going to take sausage balls for a little appetizer and I will probably double the recipe so the boys can have a snack while playing golf tomorrow. I might take some to the pool for us girls too :)
Here's the recipe I'll be using.
Bisquick Sausage Balls
Ingredients:
2 cups Bisquick
1 pound sausage
10 oz. pack of shredded cheese (or just shred your own from a block of cheddar)
Directions:
Put everything in the bowl and mix.
Roll the mixture into balls, a little smaller than golf balls.
Place the sausage balls on a cookie sheet.
Bake at 350 degress for about 20 minutes. The Bisquick balls should be lightly browned wtih the meat cooked through.
Tips:
Cook sausage halfway and pour off grease.
If doubling recipe use 1 package of hot sausage and 1 package of mild. Gives it a little zip!
Use medium cheddar cheese. I love sharp cheddar, but it can make it too dry.

WHAT?!?! Pour off the grease?? That's the best part! Haha! Just kidding...kinda... I could eat my weight in sausage balls! I'm pretty sure I have actually. I go through phases where I make a mess of sausage balls once a week for months. So so so so good.
